I've got to have this book!

I saw this on the Oprah show today and I need this book now!! I am so tired of the veggie battle with my kids. I think this book is the answer to winning that battle. They said the brownie recipe is to die for and it is loaded with spinach and carrots!! It even has the Dr. Oz seal of approval and you all know I love Dr. Oz!! I will be getting this and a mini food processor in the very near future.

Apple Muffins.....

Here is apple muffin recipe I got from a friend. She says they are the best she has tasted!! Enjoy!

Buttermilk Apple Muffins
3/4 cup brown sugar
2 eggs, slightly beaten
1 1/2 cups flour
1/4 tsp salt
1/2 cup buttermilk
1/3 cup veggie oil
1 tsp vanilla
1/2 tsp baking soda
1 cup chopped apple

Topping: 1/4 cup brown sugar
1/2 tsp cinnamon
1/4 cup chopped walnuts (we prefer pecans)

Preheat oven to 350. Stir together brown sugar, oil, eggs, and vanilla in a large bowl. Add flour, soda, and salt. DO NOT OVER STIR. Add buttermilk and apples, stir lightly, and put into a prepared muffin tin. Sprinkle with topping and bake 20 minutes.
