Monday....

Rain, rain, go away! I'd like to hang some laundry today! It has been raining here for 4 days. I would just love to start my favorite spring activity - hanging laundry outside! It will not happen today. Maybe later this week?

My find of the week.....

We bought all this produce at a local market for just $11. We were very happy with those prices! My DH used his juicer for the pineapples and oranges. The apples and pears made great additions to breakfast and dinner.

Menu Monday......

Monday - pork chops, red potatoes, peas, pears

Tuesday - Fish night, mac and cheese. broccoli and cauliflower

Wednesday - fresh sausage, balsamic cous cous salad (see picture and recipe below)

Thursday - Joe Corby pizza with left over sausage as a topping, left over cous cous

Friday - nacho night

Saturday - birthday dinner out!!

Balsalmic Cous Cous Salad

1 box of cous cous prepared to the box instructions.
Mix olive oil, balsamic vinegar, garlic powder and a dash of oregano in a small bowl and whisk well.
Pour mixture on cous cous and stir.
Stir in chopped fresh spinach, tomatoes, fresh mozzarella and corn.
Chill and serve.

I add whatever I have on hand, In the picture above, I added chopped chicken breast to the cous cous to make it the entire meal. This time I may add the sausage.

Wednesday Freebies....

This morning I am busy cleaning the floors, doing laundry and doing dishes. All before my 9:00 start time for work. Oh, and getting 2 kids off to school, taking care of the dog and fish tank as well as making the beds. Thank goodness for vacuume cleaners, washing machines and dishwashers!! They allow the modern woman to multi task in a way a pioneer woman could only dream of.

Recycle Your Trash.....

We try hard here to lower our contributions to land fills. When we have items we no longer can use, we freecycle, sell at yard sales and thrift stores, donate to Goodwill or pass it on to friends. There is a lot that just does not fit into those categories though and just plain old needs to be thrown away. Here is my trash system.....

Black can = compost
Light Blue can = aluminum cans
Dark Blue can = regular recycle bin
Large Blue can = trash


We cash in the aluminum cans for cash and use the compost in the garden. Here is a look at what we do with the cardboard......

We flatten all card board boxes and stack them in a larger box. Doing this really helps cut down on trash! Cardboard is picked up with regular recycles.

All of this helps the earth be a greener place and takes very little effort. If you do not recycle already, I hope you will consider it. Every little bit helps!
