My find of the week.....
We bought all this produce at a local market for just $11. We were very happy with those prices! My DH used his juicer for the pineapples and oranges. The apples and pears made great additions to breakfast and dinner.
Monday - pork chops, red potatoes, peas, pears
Tuesday - Fish night, mac and cheese. broccoli and cauliflower
Wednesday - fresh sausage, balsamic cous cous salad (see picture and recipe below)
Thursday - Joe Corby pizza with left over sausage as a topping, left over cous cous
Friday - nacho night
Saturday - birthday dinner out!!
Balsalmic Cous Cous Salad
1 box of cous cous prepared to the box instructions.
Mix olive oil, balsamic vinegar, garlic powder and a dash of oregano in a small bowl and whisk well.
Pour mixture on cous cous and stir.
Stir in chopped fresh spinach, tomatoes, fresh mozzarella and corn.
Chill and serve.
I add whatever I have on hand, In the picture above, I added chopped chicken breast to the cous cous to make it the entire meal. This time I may add the sausage.
