Lowfat Zucchini Spice Cupcakes

Recipe:

1 package spice cake mix
1 1/3 c water
1/2 cup apple sauce
3 eggs
2 c shredded zucchini

In a large bowl, combine the cake mix, water, oil and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Stir in zucchini. Fill paper-lined muffin tins 2/3 full.

Bake @ 350 for 18 - 22 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack to cool completely.

Cinnamon Frosting:
1/4 c butter (soft)
1 3/4 c confectioners sugar
1 tsp vanilla
1/2 tsp cinnamon
1/8 tsp ground nutmeg
1/ to 2 Tbsp milk

In a small bowl, beat butter until light and fluffy. Beat in confectioners sugar, vanilla, cinnamon and nutmeg. Add enough milk to achieve spreading consistency.
