We cleaned them and cut them up in small pieces, along with and zucchini, garlic, onions and green peppers we could find from the garden.
We steam this mixture..........
Then, I puree it in a food processor until it looks like this.....
I put them in small bags and freeze them. I will use these mixtures throughout the year to make jarred spaghetti sauce taste a little better. It also helps me get a few more veggies into the kids without them noticing. I have even added a mix, similar to this, into a boxed brownie mix. My family loves the added flavor and moisture!

Bonnie, Last year was the first we tried this. We loved the flavor it added to our food so much! We planted a much larger carrot crop this year with this in mind. The kids even know I am adding it to their food and do not mind as long as there are no veggie chunks! LOL

I too do this when childminding to hide veggies in food! NEver thought of adding it to a brownie mix though... will have to give that a go!!
