What to do with garden carrots.......

Last week I showed you this bucket of carrots from the garden. We estimate that we had a harvest of about 25 pounds of carrots. What did we do with all of them?

We cleaned them and cut them up in small pieces, along with and zucchini, garlic, onions and green peppers we could find from the garden.

We steam this mixture..........

Then, I puree it in a food processor until it looks like this.....

I put them in small bags and freeze them. I will use these mixtures throughout the year to make jarred spaghetti sauce taste a little better. It also helps me get a few more veggies into the kids without them noticing. I have even added a mix, similar to this, into a boxed brownie mix. My family loves the added flavor and moisture!

We could probably even cook this down a little more and call it carrot soup.

To see what other people have tackled this week, go here......

Bonnie, Last year was the first we tried this. We loved the flavor it added to our food so much! We planted a much larger carrot crop this year with this in mind. The kids even know I am adding it to their food and do not mind as long as there are no veggie chunks! LOL

Isn't it sneaky of us to get those veggies in??? I used to do the same thing all of the time when my daughter was growing up. Actually, I still do it!Thanks for sharing it. I would like to invite you to participate in Crock Pot Wednesday at diningwithdebbie.blogspot.com. Any kind of slow cooker recipe will work. Come check it out.

Smart to sneak in those veggies! My kids love carrots, but we haven't tried growing them yet.
