I have been know to throw dyed Easter eggs away in the past. Not this year! We made pickled red beet eggs! The red beats are even from our garden. DH pickled and jarred them last year. Yummy!

we love pickled beats, we'll have to try adding the eggs. I made egg salad sandwiches with our leftovers, not so creative, but OH SO delicious!

Pickled Eggs have to be one of my favorite Spring food items my mom makes. I hate beets, but I love those eggs.

I am suprised at how many people never hear of pickled red beet eggs. It is very common in our neck of the woods.
