The low fat enchiladas I made from scratch. They got a high 8 from my husband! I'll take that.
Recipe:
1 lb lean ground beef
steamed and pureed carrots and onion
1 can tomato sauce
1 can tomato juice
1 bag low fat cheese (i used regular)
flour tortilla's
- mix half tomato juice and half tomato sauce in pan with browned ground beef and pureed veggies. place this mixture and cheese inside the flour tortilla and roll, place in baking dish, seem side down. fill dish with rolled tortilla's and cover with the rest of the tomato juice/sauce. Bake at 350 degrees covered for about 20 minutes. Sprinkle the top with cheese and place back in warm oven uncovered and oven turned off.
- I added diced jalapenos to DH's enchilada's
- I had a nice size container of the hamburger/sauce mixture so I froze it to add to our spaghetti sauce at a later date.
