Frugal and Tasty Low Fat Muffins...........

I have been buying Weight Watcher's brand muffins these last few weeks as I diet. They taste great but are very expensive! This is my frugal solution...........


I found this cake mix in my pantry with a 2/$1.00 sticker on the top of the box. I buy these at the discount grocery store. I also saved my uneaten bananas. Add some home made apple sauce and 3 eggs and that gave me all the ingredients!



I filled my cupcake tins and a loaf pan..................


....... and ended up with 24 cupcakes (I wonder where the missing cupcake could be?) and 1 mini cake. I froze the muffins so I can pull a few out at a time. What I did not count on was my DH and DD loving these like they did! The mini cake is already gone! Since all these cost under $1.00, I guess I can share!!

I make muffins several times a week and there are never any left over to freeze. With 4 growing kids and a very hungry hubby ( not to mention me) they are gone!

I am going to make this soon because I have two cake mixes in my pantry (from the salvage grocery store!) and plenty of bananas and applesauce.

Even better that they're low fat! Thanks for the inspiration!

What a great idea! I buy quite a bit of our things from a local discount grocery store. I try to stop in there first, then shop at Walmart for what I can't find or make do with from the discount store. Freezing muffins is a great idea too. It will make a quick breakfast or snack later.

Becca, The recip is the 2nd paragraph and also the picture shows all the ingredients. Soory, I did not measure anything.

I would be curious to know the point value as well. I am addicted to the WW blueberry muffins, but WOW are they expensive!
